Savory with a hint of deep sweetness, the marinade on these onion rings brings out their caramelized flavor. A grill basket makes the cooking easy, by keeping the onions together when you flip them, and the big payoff on the plate with the rings warrants the small investment.

BALSAMIC SOY MARINADE
4 | tablespoons balsamic vinegar |
1½ | tablespoons soy sauce |
1½ | tablespoons vegetable oil |
1 | large red onion, sliced into ⅓-inch rings |
1 | large white onion, preferably a sweet onion such as Vidalia, Maui, or Texas 1015, sliced into ⅓-inch rings |

Prepare the marinade, combining the ingredients in a small bowl. Place the onion rings in a large plastic bag or shallow bowl, pour the marinade over them, and let them sit at room temperature for about 30 minutes, turning occasionally.
Fire up the grill, bringing the temperature to medium-low (6 seconds with the hand test).
You can grill the onion rings directly on the grate or in a grill basket. Grill them uncovered for 18 to 20 minutes, turning every few minutes to cook each side twice. The onions are ready when they are very soft with browned edges. If grilling covered, cook for about 15 minutes, turning once midway.
Arrange the onion rings on a platter, sprinkle with chives for a bit of color, and serve hot or at room temperature.
