WONTON BALLS AND MARINATED SCALLIONS

This dish has become a huge hit in my house, and I knew I had to share it with you. What I love about these flavor bomb balls is that you can use them as part of a meal, but they are also wonderful for entertaining. They are incredibly tasty and make the perfect finger food for any party. Just pop them in an air fryer, and in no time, you are ready to get the party started with wonton balls. If you don’t eat pork, you can try substituting chicken or turkey.

½ oz (14 g) dried shiitake mushrooms

1 lb (454 g) ground pork

½ cup (35 g) finely chopped Napa cabbage leaves

2 tbsp (2 g) finely chopped fresh cilantro leaves

4 cloves garlic, finely minced, divided

½ tsp sea salt

½ tsp black pepper

3 tbsp (45 ml) avocado oil, divided

1 tbsp (15 ml) sesame oil

1 tsp fish sauce

1 tsp rice vinegar

2 tbsp (30 ml) coconut aminos

3 scallions, finely chopped

½ tsp crushed red pepper flakes

Add the dried mushrooms to a bowl of warm water. Set them aside to rehydrate for about 15 to 30 minutes. Remove the mushrooms from the water, squeeze out any excess liquid and chop them very finely.

Transfer the mushrooms to a mixing bowl along with the ground pork, cabbage, cilantro, half of the garlic, sea salt and black pepper. Use a fork to gently mix the meat mixture until it’s well combined; do not overmix. Use a small cookie scoop to scoop out equal amounts of the meat mixture, roll them into balls using your hands and transfer them to a tray lined with parchment paper. You should be able to make 12 to 15 balls from the meat mixture.

To make the marinated scallions, add the remaining garlic to a bowl along with 1 tablespoon (15 ml) of avocado oil, the sesame oil, fish sauce, rice vinegar, coconut aminos, scallions and crushed red pepper flakes. Stir the mixture and set it aside.

Spray an air fryer basket with avocado oil spray and add the meatballs to the basket, making sure they do not touch. Do this in batches if your air fryer basket is not large enough to fit all the meatballs at once. Cook in the air fryer at 375°F (190°C) for 12 to 15 minutes, depending on your air fryer.

Remove the meatballs from the air fryer. Scatter the marinated scallions over the wonton balls and serve hot.

PRO TIP: To cook this dish in the oven, transfer the rolled meatballs to a prepared sheet pan sprayed with avocado oil spray. Cook the meatballs in a preheated oven at 400°F (200°C, or gas mark 6) for 15 to 20 minutes, turning once. Then serve them with the marinated scallions.
