SIMPLE MINCED PORK NOODLES

There is no better way to satisfy all your takeout cravings than with a warm bowl of noodles. This quick and easy dish packs a lot of flavor without having a long list of ingredients. Most of the ingredients are pantry staples so you can be on your way to a crowd-pleasing dinner in no time.

3 large zucchinis, spiralized Sea salt

1 lb (454 g) ground pork

1 tbsp (15 ml) sesame oil

1 shallot, finely chopped

2 cloves garlic, minced

1 tsp ginger

¼ cup (60 ml) coconut aminos

2 tbsp (30 ml) no-sugar-added BBQ sauce

1 tsp golden monk fruit sweetener

1 tsp crushed red pepper flakes

Chopped scallions and sesame seeds, to garnish

Transfer the spiralized zucchini noodles to a large bowl lined with cheesecloth. Sprinkle a few pinches of salt over the noodles and set aside.

Heat a deep skillet over medium-high heat and add the ground pork. Cook the pork until it is no longer pink and starts to develop a nice brown crust, about 7 minutes. Add the sesame oil, shallot, garlic and ginger to the pan. Continue to cook the pork and the aromatics for another 5 minutes until the shallot is tender.

To make the sauce, combine the coconut aminos, BBQ sauce, sweetener and crushed red pepper flakes to a small bowl and mix well. Pour half of the sauce over the pork and sauté for about 2 minutes, stirring continuously.

Wrap the cheesecloth around the zucchini noodles and squeeze to get all of the excess liquid out of the noodles. Increase the heat to high, and add the noodles to the pan. Toss the noodles with the pork mixture for about 2 minutes. Lower the heat to medium-high, then pour the rest of the sauce over the noodles and pork and continue to sauté, stirring continuously, for 2 to 3 minutes.

Taste and season the mixture with salt and pepper if necessary. Garnish with scallions and sesame seeds, and serve immediately.

PRO TIP: If you are not a fan of zucchini noodles, try using shirataki noodles. You can also use cooked spaghetti squash for a heartier meal.
