Cauliflower is one of the healthiest cruciferous vegetables out there. It’s loaded with fiber, vitamins and potassium. So, it is the perfect substitution for rice on the Keto diet. The number one question I get when it comes to cauliflower rice is, “How do I make my cauliflower rice fluffy and not mushy”? 1 tbsp (15 ml) avocado oil
1 (12-oz [340-g]) bag cauliflower rice
Garlic seasoning of choice
Heat the avocado oil in a skillet over high heat and add the cauliflower. Cook the cauliflower, stirring continuously, for 3 to 5 minutes, until it is tender and fluffy.
Keep the temperature on high for the entire cooking process while continuously tossing the cauliflower rice. This will help get rid of all the excess liquid very quickly while allowing the cauliflower rice to keep its shape.
Season the rice with your favorite garlic seasoning. Waiting until the rice is cooked to season is an extra effort to ensure your cauliflower rice is not mushy. Adding salt or salt-based seasonings to any vegetable like cauliflower only draws out liquid from the vegetables.
Transfer the cauliflower rice to a serving bowl.
