OVEN TO TABLE

WHENEVER I THINK OF ONE-POT MEALS, it brings me right back to my childhood. My grandmother and I were always experimenting with different casseroles, braising methods or anything we could cook just by throwing something into the oven and calling it a day. So, my love for decadent baked dishes has been brewing for a very long time.

This chapter excites me in a very special way because it really is a nod to my grandmother. I had to include some of her classics, such as Grandma Toulia’s Ratatouille and Incredible Eggplant Parmesan. But there are also easy “dump and go” recipes that require less prep work, such as Date Night Salsa Verde Chicken Bake and Classic Meatballs in Spicy Tomato Sauce.

You will find we use a few different baking methods in this collection of recipes. Some, such as Spaghetti Squash Parmesan, are twice baked, while other dishes, such as Mexican Stuffed Peppers, are finished in the oven. No matter the method, they are all warm and welcoming meals that will only spark joy.
