Celery can get limp in the refrigerator in just a few days. To crisp it up before eating or cooking with it, trim and cut each stalk into halves or thirds. Rinse well and place in a bowl of ice water. Let stand for 10 to 15 minutes. The porous stalks will soak up the water and get crunchy again!

1 Preheat oven to 450°F. Place pita rounds on a baking sheet. Brush with blue cheese dressing. Top with chicken and celery strips.

 

2 Bake, uncovered, about 10 minutes or until heated through and pitas are crisp. Transfer to plates. Sprinkle with blue cheese crumbles. If desired, pass hot pepper sauce.
