The normally high-fat blue cheese in anything labeled “Buffalo” is substituted here for light blue cheese wedges and fat-free blue cheese salad dressing. Same great tang, far fewer fat grams and calories.

1 Divide romaine among four serving plates or bowls.

 

2 In a medium microwave-safe bowl combine chicken and wing sauce. Microwave on 100 percent power (high) about 60 seconds or until heated through. Evenly divide chicken mixture and spoon over romaine. Top with blue cheese and pepper.

 

3 In a small bowl combine salad dressing and milk; drizzle over salads. Serve with celery sticks.
