It Makes Two Fruit and Nut Bread with Pineapple Nut Spread
If you are going to go to the trouble to bake bread, you might as well bake two loaves at the same time. That way you have one for yourself and one you can share with a friend.
3 cups all-purpose flour
1½ teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
2 cups sugar
1½ cups canola oil
3 large eggs
1 teaspoon vanilla extract
1 (21-ounce) can fruit pie filling (cherry, apple, peach, or strawberry)
1 cup your favorite nuts, chopped
Pineapple Nut Spread (recipe follows)
Preheat the oven to 350 degrees. Grease and flour two 9 × 5-inch loaf pans. Mix the flour, cinnamon, salt, baking soda, and sugar in a large bowl. Add the oil, eggs, vanilla extract, pie filling, and nuts and stir until combined. Spoon the batter into the prepared pans and bake for 55 to 60 minutes, or until a toothpick inserted in the middle of the loaves comes out clean. Cool for 10 minutes in the pan. Remove to a wire rack to cool. If desired, serve with Pineapple Nut Spread.
Makes 2 loaves.
