Swiss Potato Casserole

These potatoes are delicious and filling—and a great reward for people doing work for you around the house.

¼ cup butter, divided

5 medium potatoes, peeled and thinly sliced

½ teaspoon salt

½ teaspoon black pepper

2 cups shredded Swiss cheese, divided

¼ cup finely chopped onion

¼ cup fresh parsley, chopped

2 cups heavy cream

Preheat the oven to 350 degrees. Butter a 2-quart baking dish with 2 tablespoons of butter. Season the sliced potatoes with the salt and black pepper. Place one layer of the potatoes in the bottom of the baking dish and top with 1 cup of the cheese, onion, and parsley. Layer the remaining potatoes on top. Cover with the heavy cream. Sprinkle with the remaining cheese and dot with the remaining 2 tablespoons of butter. Bake for 1 hour or until the potatoes are tender.

Makes 6 to 8 servings.
