I remember my mother making homemade hominy. Nobody does that anymore. But I think about that every time I eat this dish. It’s a great alternative to potato salad.
2 (14.5-ounce) cans yellow or white hominy, rinsed and drained
½ cup chopped red bell pepper
2 tablespoons finely chopped onion
1 cup shredded Cheddar cheese
½ cup chopped sweet pickle
1 jalapeño pepper, seeded and finely chopped
2 large tomatoes, chopped
½ cup mayonnaise
1 teaspoon salt
¼ teaspoon black pepper
1 teaspoon chili powder
1 teaspoon ground cumin
Combine the hominy, red pepper, onion, Cheddar cheese, sweet pickle, jalapeño, and tomatoes together in a large bowl. In a small bowl combine the mayonnaise, salt, black pepper, chili powder, and cumin. Pour over the hominy mixture and toss to mix well. Cover and place in the refrigerator 1 hour before serving.
Makes 8 to 10 servings.
