Strawberry Pizza

I have also made this using fresh peaches. But if you do, omit the red food coloring.

1 cup self-rising flour

¼ cup powdered sugar

½ cup butter, melted

1 (8-ounce) package cream cheese, softened

1 (14-ounce) can sweetened condensed milk

⅓ cup lemon juice

1 teaspoon vanilla extract

⅔ cup sugar

2 tablespoons cornstarch

½ cup water

3 drops red food coloring

⅛ teaspoon salt

1 quart strawberries, hulled and quartered

Preheat the oven to 350 degrees. Combine the flour, powdered sugar, and melted butter in a small bowl. Stir well and spread evenly over a 14-inch pizza pan. Bake for 10 minutes or until lightly browned.

In a medium bowl combine the cream cheese, condensed milk, lemon juice, and vanilla extract. Mix until smooth. Chill for 1 hour.

In a large saucepan combine the sugar, cornstarch, and water. Cook over medium heat. Bring to a boil, stirring constantly until thickened. Add the food coloring and salt. Stir in the strawberries. Cool completely. To assemble, cover the crust with the cream cheese mixture and spread the strawberry mixture over the cheese layer. Chill. Cut into wedges and serve.

Makes 10 to 12 servings.
