Bacon, Lettuce, and Tomato Soup
This is a delicious cold soup. Perfect for a hot summer day.
1 pound tomatoes, peeled and seeded
1 small cucumber, peeled, seeded, and coarsely chopped
2 tablespoons coarsely chopped onion
2 tablespoons olive oil
2 tablespoons red wine vinegar
4 cups tomato juice
½ cup whipping cream
½ teaspoon salt
⅛ teaspoon cayenne pepper
1 cup lettuce, shredded
5 slices bacon, cooked and crumbled
Place the tomatoes, cucumber, and onion in the bowl of a food processor. Pulse just until coarsely chopped. Add the olive oil, vinegar, and tomato juice. Process until pureed. Add the whipping cream, salt, and cayenne pepper. Process until blended. Cover and refrigerate for 1 hour. Pour into soup bowls and top with the lettuce and crumbled bacon.
Makes 6 servings.
