This is very good served with chicken or ham. It will surely impress your guests.
¼ cup butter, plus extra for preparing dish
¼ cup all-purpose flour
1 teaspoon salt
3 tablespoons sugar, divided
1¾ cups milk
3 cups fresh or frozen creamed corn (thawed if using frozen)
3 large eggs, beaten well
Preheat the oven to 350 degrees. Butter a 1 ½-quart casserole dish. In a medium saucepan melt the butter over medium heat. Whisk in the flour, salt, and 1 ½ tablespoons sugar, stirring for 2 minutes. Add the milk and cook until thick, stirring constantly. Stir in the corn and eggs. Pour into the buttered dish. Bake for 45 minutes or until the center is set. Remove from the oven and sprinkle with the remaining 1 ½ tablespoons sugar. Place under the broiler for 2 minutes or until the sugar is melted and golden brown. This can also be done with a torch.
Makes 6 to 8 servings.
