Summer Tomato Sandwich

You almost need to stand over the sink to eat this. But I love a juicy tomato sandwich.

4 slices white or wheat bread

2 tablespoons mayonnaise

¼ cup finely chopped onion

4 large tomato slices

¼ cup toasted pecans, finely chopped

¼ teaspoon salt

Spread each bread slice with mayonnaise. Sprinkle 2 slices of bread with the onions; top each with 2 slices of tomato, toasted pecans, and salt. Cover with the remaining bread slices. Cut in half.

Makes 2 servings.
