Frozen Apricot Fruit Salad

All Southern women have several frozen salad recipes on hand. My family loves apricots so this is my go-to frozen salad.

6 ounces frozen orange juice concentrate, thawed

6 ounces water

¾ cup sugar

1 (15.25-ounce) can apricot halves, drained and diced

1 (20-ounce) can crushed pineapple with juice

1 (15-ounce) can mandarin oranges, drained

4 large bananas, diced

1 cup pecans, chopped

1 (8-ounce) container frozen whipped topping, thawed

Curly leaf lettuce, optional

Mix the orange juice concentrate, water, and sugar together in a large bowl. Add the apricots, pineapple, mandarin oranges, bananas, and pecans. Fold in the whipped topping. Pour into a 9 × 13-inch glass dish, cover, and freeze overnight. Remove from the freezer 15 minutes prior to serving. This is pretty cut into squares and served on lettuce leaves.
