Roasted Brussels Sprouts with Bacon and Pecans

Roasting the Brussels sprouts really brings out the extra flavor in this side dish.

2 pounds Brussels sprouts

2 tablespoons olive oil

1 garlic clove, minced

½ teaspoon salt

1 teaspoon black pepper

1 cup pecans, chopped

6 slices bacon, cooked and crumbled

Preheat the oven to 400 degrees. Place the Brussels sprouts in a large bowl and toss with the olive oil, garlic, salt, black pepper, and pecans. Spread on a large cookie sheet and roast for 10 minutes, stirring occasionally, until the Brussels sprouts are tender and golden brown. Sprinkle with the bacon and serve.

Makes 8 servings.
