Blackberry Barbecued Chicken with Jalapeño Corn Fritters
The secret here is the blackberry sauce. Keep this on hand and you’ve got a very quick and delicious dinner.
1 (3- to 4-pound) rotisserie chicken
1½ cups Blackberry Barbecue Sauce (recipe follows)
Jalapeño Corn Fritters (recipe follows)
Remove the chicken from the bone and tear into small pieces. Place in a large bowl and stir in the Blackberry Barbecue Sauce. Reheat when ready to serve with the Jalapeño Corn Fritters.
To serve, place ½ cup of the chicken on a fritter and top with an additional one. Drizzle with more barbecue sauce.
Makes 6 servings.
