Peach Salsa

2 cups (2 to 3 large) peaches, peeled and diced

1 large tomato, peeled and diced

2 tablespoons finely chopped red onion

¼ cup finely diced red bell pepper

½ jalapeño pepper, seeded and finely diced

2 tablespoons lemon juice

1 tablespoon honey

¼ teaspoon salt

¼ teaspoon black pepper

Combine the peaches, tomato, red onion, red pepper, jalapeño, lemon juice, honey, salt, and black pepper in a medium bowl. Cover and refrigerate for 2 hours before serving.
