My sister-in-law Wilma Foster is a wonderful cook. This is one of the dishes she brings to our family gatherings.
1 cup uncooked rice
½ cup butter, melted
½ cup finely chopped onion
1 cup pecans, chopped
1 (10.75-ounce) can cream of mushroom soup
1 (10.75-ounce) can beef consommé
1 soup can of water
Preheat the oven to 350 degrees. In a medium bowl mix together the rice, butter, onion, pecans, mushroom soup, beef consommé, and water. Pour into a 2-quart casserole dish. Cover and bake for 1 hour or until the rice has absorbed all the liquid.
Makes 8 servings.
