Pimento Cheese Corn Muffins with Turkey

1 (8.5-ounce) box corn muffin mix

¼ cup milk

1 large egg

½ cup pimento cheese

4 slices turkey

Mayonnaise, optional

Preheat the oven to 400 degrees. Grease or spray a miniature muffin tin. In a medium bowl mix the muffin mix, milk, and egg together until smooth. Stir in the pimento cheese. Fill the cups ½ full. Bake for 15 minutes or until golden brown. When cool, split in half and top with ¼ piece of turkey. If desired, spread with mayonnaise.

Makes 16 muffins.
