I love baked fruit as a side dish. This is great served with pork or chicken.
1 (20-ounce) can pineapple chunks, drained (reserve 1 cup juice)
1½ tablespoons cornstarch
½ cup sugar
8 medium pears, peeled and sliced
⅓ cup butter, melted
⅓ cup firmly packed brown sugar
1 cup round butter cracker crumbs
Preheat the oven to 375 degrees. Lightly grease a 9-inch baking dish. Combine 1 cup pineapple juice with the cornstarch in a small saucepan. Add the sugar and cook over medium heat until the mixture comes to a boil. Stir constantly until thickened. Place the pears in the baking dish. Pour the pineapple chunks over the pears. Pour the thickened pineapple juice over the fruit. Mix the butter, brown sugar, and cracker crumbs together. Sprinkle over the top. Bake for 30 minutes or until bubbly.
