Deep-Fried, Deep-South Sweet Potato Chips

2 pounds sweet potatoes
Vegetable oil for frying
Salt for garnish, optional
Powdered sugar for garnish, optional
Peel and slice the sweet potatoes crosswise into very thin slices. Soak in a bowl of cold water overnight or ice water for 2 hours. Drain and dry the slices.
Add the oil to a large skillet with high sides and preheat to 375 degrees. Carefully add the sweet potato slices to the hot oil and fry for 2 to 3 minutes or until crisp. Drain on paper towels and sprinkle with salt or dust with powdered sugar. Place in a serving bowl and serve hot.
Makes 6 servings.
