Good Neighbor Chicken Fiesta Soup
Our neighbor Jean Smith (and I can only wish each of you such a good neighbor) brings us this soup. It is one of our favorites.
2 tablespoons butter
½ cup finely diced onion
2 chicken breasts, cooked and diced (1 pound)
2 (15-ounce) cans chicken broth
1 (15-ounce) can pinto beans
1 (15-ounce) can white beans
1 (15-ounce) can hominy
1 (15-ounce) can white whole kernel corn
1 (10-ounce) can tomatoes and green chilies
1 pound processed cheese spread, cubed
In a large pot or Dutch oven melt butter over medium heat. Add diced onion and sauté for about 3 minutes. Add the cooked chicken, chicken broth, pinto beans, white beans, hominy, corn, and tomatoes and green chilies, and mix well. Simmer for 30 minutes. Add the cheese, reduce the heat to low, and continue to cook for 30 minutes.
Makes 10 to 12 servings.
