Sautéed Sliced Beef Tenderloin

This is a must-have at any party I throw. Perfect on homemade rolls.

2 teaspoons salt

2 teaspoons black pepper

3 to 4 pounds tenderloin, sliced ¼ inch thick (fat removed)

½ cup all-purpose flour

¼ cup butter, divided

¼ cup olive oil, divided

Mix the salt and black pepper together. Season the meat. Put the flour in a 9-inch cake pan. Dip the tenderloin pieces in the flour and shake off any excess. Put half of the butter and half of the oil in a 10-inch skillet or electric skillet and set over high heat. When the oil mix is hot, add half the meat, and sauté no longer than 1 to 2 minutes per side, just to brown. Remove to a serving dish and repeat the process until all the meat is browned, adding additional oil as needed. Serve with rolls and your favorite sauce or spread.
