Here’s another use for the biscuit mix. These remind me of an apple pie with a slab of Cheddar cheese on it. So good.
1¾ cups All-Purpose Biscuit Mix (page 50)
1 tablespoon sugar
⅓ cup walnuts, chopped
¾ cup shredded Cheddar cheese
1 small apple, peeled and grated
⅓ cup milk
Preheat the oven to 400 degrees. Lightly grease a 9 × 11-inch baking pan. In a medium bowl mix together the biscuit mix, sugar, walnuts, Cheddar cheese, and grated apple. Add the milk, stirring until just moistened. Flatten the dough on a lightly floured board. Roll to ¾ to 1 inch thick. Cut with a 2-inch cutter. Place on prepared baking pan and bake for 15 to 20 minutes or until golden brown.
Makes 16 to 18 biscuits.
