Ham and Cheese Oven Omelet

This is so much easier than scrambling dozens of eggs as your guests are arriving.

8 large eggs, beaten

½ cup sour cream

½ teaspoon salt

¼ teaspoon black pepper

1 cup shredded Cheddar cheese

½ cup diced cooked ham

2 tablespoons butter, melted

Preheat the oven to 350 degrees. Lightly grease a 1 ½-quart baking dish. Whisk together the eggs, sour cream, salt, and black pepper. Stir in the cheese and ham. Pour the egg mixture into the baking dish. Drizzle the butter over the top. Bake for 20 to 22 minutes or until the eggs are set. Serve immediately.

Makes 6 to 8 servings.
