Shrimp Salad

This is an easy recipe to double or triple if you are serving more than two.

1 cup large shrimp, cleaned, shelled, and cooked

2 tablespoons chopped sweet pickles

1 tablespoon sliced olives

1 tablespoon chopped celery

1 tablespoon lemon juice

3 tablespoons olive oil

¼ teaspoon salt

⅛ teaspoon black pepper

⅛ teaspoon dry mustard

1 teaspoon ketchup

2 cups mixed salad greens

½ small red onion, thinly sliced

In a medium bowl mix together the cooked shrimp, chopped pickles, olives, and celery. In a small bowl whisk together the lemon juice, olive oil, salt, black pepper, dry mustard, and ketchup. Pour over the shrimp mixture and toss to combine. Divide the salad greens between 2 salad places, and top with the shrimp. Top with the red onion rings. Cover and chill 1 hour prior to serving.

Makes 2 servings.
