Fresh Strawberry Soup

This is such a delicious second course.

2 cups strawberries

⅓ cup sugar

¼ cup orange juice

¼ cup heavy cream

2 tablespoons sour cream

Set 2 strawberries aside for the garnish and hull the rest. Slice and put in the bowl of a blender. Add the sugar and orange juice and process until smooth. Add the heavy cream and sour cream and process just until blended. Cover and refrigerate for 2 hours. Pour into 2 bowls and garnish with the strawberries cut into a fan shape.

Makes 2 servings.

Note: This recipe can be doubled.
