Roasted Asparagus with Pine Nuts and Parmesan Cheese
This delicious take on asparagus will impress any gentleman caller.
½ pound asparagus
1 tablespoon olive oil
¼ teaspoon salt
¼ teaspoon black pepper
3 tablespoons pine nuts, toasted
2 tablespoons grated Parmesan cheese
Preheat the oven to 400 degrees. Wash the asparagus and break off the fibrous ends. Blot dry with a paper towel. Place in a small baking dish. Drizzle with olive oil and sprinkle with salt and black pepper. Roast for 8 to 10 minutes.
Place the pine nuts in a small skillet over medium-low heat and stir or shake the skillet for 2 to 3 minutes or until the nuts are golden brown. Remove the asparagus to a serving tray and sprinkle with the toasted pine nuts and Parmesan cheese.
Makes 2 servings.
