Barbecued Lamb Chops

When I’ve got the grill up and going, I sometimes like to cook several kinds of meats. Lamb and pork chops, steak, and chicken: these are definite crowd pleasers.

⅓ cup firmly packed brown sugar

⅓ cup soy sauce

2 tablespoons ketchup

1 tablespoon lemon juice

½ teaspoon ground ginger

½ teaspoon salt

½ teaspoon black pepper

4 (1-inch-thick) lamb chops

Prepare the grill or an indoor grill pan to medium-high heat. In a small bowl mix together the brown sugar, soy sauce, ketchup, lemon juice, ginger, salt, and black pepper. Grill the lamb chops for 6 to 7 minutes per side. Baste with the barbecue mixture every 3 minutes. When lamb chops are done they will be slightly pink inside.

Makes 2 servings.
