Ham and Cheese Stuffed Pork Chops
Have these stuffed and ready to go on the grill before your dinner companion arrives. You can then enjoy a glass of wine or iced tea while the pork chops cook.
2 toothpicks, soaked in water for 30 minutes
2 (1-inch-thick) pork chops
2 pieces thinly sliced ham
2 pieces thinly sliced Provolone cheese
¼ teaspoon salt
¼ teaspoon black pepper
2 tablespoons olive oil
Preheat the grill to medium-high. Cut a deep pocket in the side of each pork chop. Fold the ham and cheese in half and place in the pocket. Pin the halves together with the toothpicks. Season the chops on both sides with salt and black pepper. Drizzle with olive oil, patting it on with your fingertips. Let this marinate for 30 minutes or until the grill is hot. Arrange the pork on the hot grill. Cook for 6 to 7 minutes per side or to 160 degrees. Let rest 5 minutes and remove the toothpicks before serving.
Makes 2 servings.
Note: This recipe can be doubled.
