Pimento Cheese Grits

½ cup water

½ cup milk

⅛ teaspoon salt

¼ cup quick-cooking grits

1 tablespoon butter

⅔ cup purchased pimento cheese or your homemade mix

Bring the water, milk, and salt to a boil and slowly add the grits. Reduce the heat to low. Stir occasionally for 5 minutes or until thick. Add the butter and pimento cheese. Continue to stir until the butter and cheese are melted and hot. Serve immediately with Deep-Fried Flounder.

Makes 2 servings.

Note: This recipe can be doubled.
