Green Beans with Bacon and Tomatoes

I love green beans. Love them on their own and love them dressed up with different flavors.

5 slices bacon

1 medium onion, finely chopped

1 garlic clove, minced

2 (15-ounce) cans cut green beans, drained

1 (15-ounce) can chopped tomatoes

1 teaspoon dry mustard

¼ teaspoon salt

¼ teaspoon black pepper

Fry the bacon in a large skillet over medium heat until the bacon is crisp. Remove from the skillet and place on paper towels to drain. Add the chopped onion and garlic to the bacon drippings, stirring constantly until the onions and garlic are soft. Add the beans, tomatoes, dry mustard, salt, and black pepper. Simmer for 25 to 30 minutes or until the liquid has reduced by half. Pour into a serving dish and crumble the bacon over the top.

Makes 8 servings.
