Macaroni and Cheese and Shrimp

This makes six servings. That does not mean it serves six people. My guests always want seconds of this comfort food.

2 cups elbow macaroni

3 tablespoons butter, divided, plus extra for preparing baking dish

1½ cups milk

1 large egg, beaten

¼ teaspoon salt

¼ teaspoon black pepper

2 cups uncooked large shrimp, cut in half lengthwise

4 cups shredded Cheddar cheese

1 cup shredded Pepper Jack cheese

¼ cup dry bread crumbs

Preheat the oven to 350 degrees. Butter a 2-quart baking dish. Cook the macaroni according to package directions. Add 1 tablespoon butter, stirring occasionally. Drain the water. In a large bowl mix the milk, egg, salt, black pepper, shrimp, and Cheddar cheese and stir into the macaroni. Pour into the baking dish. In a small bowl mix the Pepper Jack cheese and bread crumbs together and sprinkle over the macaroni. Drizzle with the remaining 2 tablespoons of melted butter. Bake for 25 to 30 minutes.
