Champ Mash

This classic side has a real Irish flavour which will remind any Irish person of home.

Ingredients

•   2 kilograms potatoes, peeled and diced

•   300 millilitres milk

•   250 grams scallions or onions, chopped

•   80 grams butter

•   salt and pepper

 

Method

1.   Cook your potatoes in a large pot of boiling water.

2.   Meanwhile, add the milk and scallions to a separate saucepan and simmer together for about 5 minutes.

3.   When your potatoes are cooked, strain and mash them until smooth. Now add your milk and scallions along with the butter, salt, and pepper. Mix well and serve.
