Colcannon

This is a famous Irish side bursting with taste and texture. It will satisfy the most ferocious of appetites.

Ingredients

•   500 grams potatoes, peeled

•   450 grams kale or cabbage, chopped to a medium coarseness

•   125 grams onion, scallion, or leek

•   25 grams butter, plus more for sautéing

•   80 millilitres milk

•   salt and pepper

 

Directions

1.   Cook your potatoes in a large pot of boiling water.

2.   Meanwhile, in a separate pan, cook your kale in boiling water for about 10 minutes.

3.   While these two are cooking, sauté your onion in a pan with a little butter for 2 minutes over medium heat.

4.   Preheat oven to 160 degrees C. When your potatoes are cooked, strain and mash them thoroughly and add in the strained kale, sautéed onion, butter, milk, and a good pinch of salt and pepper. Mix together well.

5.   Place your pot into the oven and bake for 15 to 20 minutes.
