Potato Salad

A creamy soft potato side with delicious crunchy vegetables. A side to have with any other side!

Ingredients

•   500 grams baby potatoes, peeled and boiled

•   3 chopped scallions

•   2 hard-boiled eggs

•   1/2 onion, chopped

•   3 tablespoons malt vinegar

•   2 small pickled gherkins, chopped

•   1 teaspoon mustard

•   150 millilitres mayo

 

Method

Combine all ingredients in a large mixing bowl and mix well. Refrigerate for at least an hour before serving.
