Ingredients
• 300 grams flour
• 1 teaspoon salt
• 50 grams cold butter
• cold water
Method
1. In a large bowl, mix together the flour and salt. Make a well in the centre.
2. Rub the butter until soft and mix with the flour mixture until it resembles breadcrumbs.
3. Add cold water a spoonful at a time until a relatively stiff dough is formed.
4. Wrap the dough in cling film. Flatten out the top and place in the fridge for about 2 hours.
5. Preheat oven to 180 degrees C. Roll out the dough to an inch thickness on a lightly floured surface and cut into the desired shape to fit your dish. (With any remaining dough, you can make shamrocks to place atop your pastry tops and bake together for a touch of flair.)
6. Pierce the pastry all over with a fork for an even rise and bake for 15 minutes or until crisp and golden.
