Bacon-Wrapped Breast of Chicken with Goat’s Cheese, Caramelized Onion, and Champ Mash

Ingredients

•   4 bacon slices

•   butter, for frying

•   4 chicken breast fillets

•   1 tablespoon chopped fresh parsley

•   6 garlic cloves, crushed

•   200 grams goat’s cheese

•   champ mash (See Irish Sides, Tops, and Stocks)

•   mixed salad, for garnish

•   caramelized onion (See Irish Sides, Tops, and Stocks)

 

Method

1.   Fry your bacon in a little butter over a medium heat in a saucepan. Remove bacon to one side when cooked but retain the fat in the pan.

2.   Add your chicken fillets, parsley, and garlic. Stir until your chicken is cooked through.

3.   Remove your fillets and wrap with the bacon slices.

4.   Top the fillets with goat’s cheese and torch or grill until the cheese is lightly browned.

5.   Serve on a bed of champ mash with a small mixed salad on the side. Place some caramelized onion on top of your goat’s cheese and enjoy.
