Bacon-Wrapped Bangers with Caramelized Onion and Champ Mash

Ingredients

•   butter for frying

•   8 large good pork sausages

•   8 bacon slices

•   salt and pepper

•   champ mash (See Irish Sides, Tops, and Stocks)

•   caramelized onion (See Irish Sides, Tops, and Stocks)

 

Method

1.   Heat some butter over a medium heat in a frying pan and quickly brown your sausages and bacon for about 2 minutes.

2.   Remove from the heat and wrap the bacon around the sausages. Grill on a medium heat for 5 minutes, turning halfway.

3.   Remove when the bacon is crisp.

4.   Season with salt and pepper to taste.

5.   Serve on a bed of champ mash.

6.   For added flair, pour some gravy around your mash and top the meat with caramelized onion.
