Apple Cake with Paddy Irish Whiskey Custard

This popular classic always pleases, and with the delicious warming Paddy Whiskey Custard, you will have the table praising you with mmmms and oohs!

Ingredients

•   130 grams plain flour

•   1/2 teaspoon salt

•   1/2 teaspoon baking soda

•   1/2 teaspoon nutmeg

•   1/2 teaspoon baking powder

•   60 grams unsalted butter

•   130 grams granulated sugar

•   1 egg

•   1 teaspoon vanilla essence

•   4 large cooking apples, preferably tangy Granny Smiths, peeled, cored, and diced into small chunks

•   Paddy Irish Whiskey Custard (see recipe at end of chapter)

 

Method

1.   Preheat oven to 180 degrees C. In a large bowl, sift together the flour, salt, soda, nutmeg, and baking powder.

2.   In another large bowl, mix together the butter and sugar with a hand mixer until creamy, and then beat in the egg until the mixture is light and fluffy.

3.   Gradually add the flour mixture to the egg mixture until well incorporated. Mix in the vanilla and then the apples.

4.   Pour the batter into a well greased 10-inch springform cake tin. Bake for about 40 minutes or until a knife inserted into the middle of the cake comes out clean.

5.   Release the springform-tin sides to aid the cooling process. Allow at least 20 minutes to cool.

6.   Pour the custard over the top and serve.
