Baileys Irish Cream and Strawberry Fool

This refreshing, light, and simple dessert tantalizes the eyes – and with the unique Baileys Irish Cream warmth and flavour, it’s sure to bring a round of smiles and liven up any party.

Ingredients

•   400 millilitres double cream

•   500 grams fresh strawberries, washed, husks removed

•   120 millilitres Baileys Irish Cream Liqueur

•   2 teaspoons icing sugar

 

Preparation

This dessert is best served in chilled glasses and will serve six, so before you start, place six glasses (preferably stemmed) into the refrigerator.

 

Method

1.   Using an electric mixer, whip the cream until stiff.

2.   Set aside 6 strawberries for topping. Puree the rest.

3.   Add the Baileys Irish Cream and half the strawberry puree to the whipped cream. Blend together well.

4.   Carefully spoon some of the strawberry puree into each glass, followed by the Baileys Irish Cream mixture. Repeat to form layers.

5.   Dust each serving with a little icing sugar and place a strawberry atop each one. Enjoy (the dessert and the praise)!
