This luxurious chocolate mousse is irresistible to the taste and the eye. It is supposed to look like a glass of Guinness and it is the source of much fame and praise.
This recipe was created by Melissa and Angela Cooper and is unique to The Hairy Lemon Restaurant.
Ingredients
• 160 grams dark chocolate (minimum 60 per cent cocoa solids), broken into small pieces
• 160 grams icing sugar
• 4 large eggs, separated
• 60 grams cocoa powder
• 100 millilitres whipping cream
• 80 millilitres Guinness stout
• 50 grams digestive biscuits
Method
• Melt the chocolate in a large heatproof bowl over a saucepan of barely simmering water and remove from the heat.
• Stir in the icing sugar. Add the egg yolks one at a time, and then add the cocoa.
• In a bowl, whisk the egg whites until stiff peaks form.
• In another bowl, whip the cream until thick. Portion some away to top your mousse at the final stage.
• Alternating, mix some of the egg whites and then the cream into the chocolate mixture until combined. Be careful not to over-mix.
• Pour your mousse into glasses, leaving enough room for a thin layer of biscuit and a cream head. (A Guinness glass makes a big difference.)
• Crush the biscuits and sprinkle a layer over the mousse. Allow to set in the fridge for several hours.
• Top with whipped cream for the Guinness look and enjoy.
