Ingredients
• 300 millilitres milk
• 300 millilitres double cream
• 1 teaspoon vanilla essence
• 4 egg yolks
• 100 grams granulated sugar
• 80 millilitres Paddy Irish whiskey
Method
1. Pour the milk and cream into a medium-sized pan and bring to the boil over a low to medium heat. Immediately remove from the heat, as the mixture will quickly burn otherwise.
2. In the meantime, whisk together the vanilla essence, egg yolks, and sugar until light and fluffy. Add the cream mixture to the egg mixture and blend well.
3. Return to the heat and cook until the mixture is thick and coats the back of a dipped spoon.
4. Add your whiskey. Stir well, pour over your cake, and enjoy.
