Simple Crepes

1. Crack the eggs into a bowl and whisk with the vanilla, sugar, and salt. Combine until even.
2. Pour in a quarter cup of flour and whisk, then a quarter cup of milk, and mix until no lumps remain. Repeat the mixing process with the flour and milk in the same quantities until they are exhausted.
3. Mix in 1 cup of water until the mixture is runny like that of pancakes and add the remaining water until the mixture is lighter.
4. Brush a large non-stick skillet with some butter and place over medium heat to melt.
5. Pour 1 tablespoon of the batter in the pan and swirl the skillet quickly and all around to coat the pan with the batter. Cook until the batter is dry and golden brown beneath, about 30 seconds.
6. Then, use a spatula to carefully flip the crepe and cook the other side until golden brown too.
7. Transfer the crepe to a plate and set aside.
8. Repeat the cooking process for the remaining batter until it is exhausted.
9. To serve the crepes, top with cream, fruits, confectioner’s sugar, etc. and enjoy with coffee or tea.
