Hoisin Pork Balls Crepes

Ingredients:

1 lb. ground pork

¾ cup breadcrumbs

2 fresh eggs, lightly beaten

Salt and black pepper to taste

½ tsp cayenne pepper

¾ cup hoisin sauce
-
2 tbsp olive oil
-
12 simple crepes
-
1 small red bell pepper, seeded and chopped
-
1 small cucumber, peeled, seeded and cut into matchsticks

1 green onion, chopped
Instructions:
1. In a bowl, combine the ground pork, breadcrumbs, eggs, salt, black pepper, and cayenne pepper. Wear gloves on your hands and mold 1-inch meatballs out of the mixture, about 24 pieces. Place in the bowl and pour the hoisin sauce over. Toss and cover the bowl with a plastic wrap – marinate in the fridge for 30 minutes.
2. After 30 minutes, heat the olive oil in a skillet, and fry the meatballs until brown on all sides, about 6 to 8 minutes in total. Transfer to a plate.
3. Lay the crepes on a flat surface and spread the sauce in the skillet on each, divide the red bell pepper, cucumber, and green onion on the crepes, and top with 2 meatballs each.
4. Roll the crepes to seal one end and leave the other side opened.
5. Serve immediately.
