Green Crepes

Ingredients:

1 cup packed spinach

1 tbsp matcha powder

2 eggs
-
½ cup full fat milk

½ cup wheat flour

A pinch of salt

1/3 cup water

1 tbsp melted butter
Instructions:
1. Put all the ingredients in a blender and puree until the spinach is smooth and well incorporated into the mixture.
2. Preheat a skillet over medium heat and grease with cooking spray.
3. Spoon two heaped tablespoons of the batter into the skillet, swirl immediately, and cook for 3 minutes.
4. Flip the crepe and cook further for 3 minutes or until firm and set. Transfer the crepe to a plate and fold into a triangle.
5. Repeat the cooking process for the remaining batter.
6. Fill the crepes with your favorite topping and serve.
