1/2 medium cucumber, peeled, seeded, and chopped
1/2 cup plain low-fat Greek yogurt
1 teaspoon chopped fresh dill
2 (10") large pita breads
1/2 cup shredded lettuce
11/2 cups shredded cooked chicken breast
1/4 cup chopped red onion
1. In a small bowl, combine cucumber, yogurt, and dill and mix well.
2. To assemble, spread the cucumber yogurt on the pita bread. Add lettuce and chicken and garnish with red onion. Serve immediately or wrap in wax paper and refrigerate for up to 4 hours.
