1 tablespoon olive oil
12 ounces beef round, cut into 1" cubes
1 cup chopped onion
2 cups (1" pieces) chopped potatoes
1/2 cup (1" pieces) peeled and chopped carrots
1/2 cup (1" pieces) peeled and chopped parsnip
1 tablespoon parsley
1/4 teaspoon Tabasco sauce
1 cup low-sodium V8 juice
1/4 teaspoon salt
1 tablespoon all-purpose flour
1/4 cup water
1 cup fresh green beans, trimmed
1. In a large bowl, sift together all-purpose flour, baking powder, and salt. Mix together egg and milk.
2. Make a well in the center of the flour mixture and pour in milk mixture. Blend together just until a dough is formed.
3. Drop dough by heaping spoonfuls (about 1/4 cup) into pot with simmering broth. Cover and simmer 10–15 minutes. Sprinkle with parsley and serve immediately.
