1 cup cooked black beans
1 cup fresh corn kernels
1 cup chopped tomato
1/2 cup chopped onion
1 teaspoon cumin
1 teaspoon garlic powder
2 (6") whole-wheat tortillas
1. Preheat the oven to 400°F. Line a baking sheet with foil and spray foil with nonstick cooking spray.
2. In a medium mixing bowl, combine the black beans, corn, tomato, onion, and spices.
3. Lay the tortillas on the baking sheet and spoon the black bean mixture onto 1/2 of each tortilla, folding the empty half over. Press lightly to close.
4. Bake for 5 minutes, turn, and continue baking for 5 minutes or until golden brown.
